Beating them is never an easy feat your chances will depend very much on the type of equipment you have.
In the first few hours of the game you won't have any kind of weapon capable of directly damaging them, but with some tricks you will be able to distract them for the time necessary to have any chance of escape.
With any bow or arrow you have at your disposal, always aim for the eye: this is the real weak point of the guardians and, once hit, will send your opponent on tilt for a few seconds, during which his head will rotate 360 degrees, thus giving you time to run away.
In case you are still at a great distance or do not have the opportunity to shoot arrows, try to run perpendicular to the direction of the laser, so you have a better chance of dodging the fatal blow.
In any case quickly take cover and try to be as little exposed to the laser aim as possible.
When, proceeding with the adventure, you will start to have some ancestral weapons, it will be possible to try to face the Guardians with melee attacks, after a shot of the arrow in the central eye to give you time to approach limiting the damage. To have an advantage on the Guardian Stalker it will be possible to try to amputate his legs, effectively immobilizing them. To cause great damage to a Guardian Skywatcher, on the other hand, it is advisable to hit him at the fuel cans with bomb arrows.
However, there is a way to damage or even defeat a Guardian even in the early stages of the adventure. It is a risky but extremely effective method: it is about making a perfect parry to the laser beam. The best technique is face our opponent by taking cover with the shield, then press "A" at the precise moment when he fires the laser. If you press it too soon you will be hit full, if you press it too late you will return to parade and the shield will be destroyed. For this reason It is worth trying this type of approach only with a good supply of shields and with maximum health.
In short, the Guardians will make your life very difficult, and if you are not careful even very short.
